
Citrus Salmon
INGREDIENTS
- 3-4lbs (1.2kg) Salmon fillet from Bakkafrost
- 1/2 cup (120ml) Orange juice
- 1/4 cup (60ml) Lemon juice
- 1/4 cup (60ml) Lime juice
- 1/4 cup (35g) Orange marmalade
- 2 Garlic cloves, minced
- 3 tbsp soy sauce
- 1/4 cup (50g) Brown sugar
- 1 tbsp Corn starch
- 1 tbsp Water
- 1 Grapefruit sliced – for seasoning
- Thyme – for seasoning
INSTRUCTIONS
Step 1
In a medium saucepan, whisk together orange juice, lemon juice, lime juice, orange marmalade, garlic, soy sauce, and brown sugar.
Step 2
In a small bowl, whisk together cornstarch and water. Slowly stir into the marinade and bring to a boil over medium-high heat until the mixture thickens. Remove from heat.
Step 3
Lay the salmon down in a roasting tin and season with salt and pepper. Pour the marinade over the top of the salmon, adding grapefruit slices and thyme for extra flavor.
Step 4
Place in the oven at 360°F (180°C) for 15 to 20 minutes.
